Tis the day before Christmas. I celebrate both days of Christmas so tomorrow is the first start of the holiday!
Garlic Lime Marinated Pork. I’m using pork “steaks” since they have no bones. I am starting to like lime with my dishes and hope this is a success. To go along with it, we’ll have some leftover Corn Salsa with Lime and I’ll be making her Cilantro Lime Rice (a la chipotle). Notice a theme? lol. Stay tuned for an update after we eat with what we think!

So I made the dishes tonight and another great meal! I accidentally forgot to add the garlic to the marinade and used 1 whole lime instead of 1/2 for the juice. I was worried that the chili powder would make it too spicy. I had the thicker of the 2 chops and I didn’t notice too much lime. But Jon’s was thinner and it def had more! Next time I’d only do the 1/2 lime and remember to add the garlic. LOL. The rice was soooo delicious. Jon hates rice, but REALLY liked this! The rice would also be amazing for tacos. So add this to your upcoming dinner menu! Oh and the leftover Corn Salsa was just as yummy as last night!
