Well, it’s only a few more days till christmas. I got a new crockpot for my bday (thanks mom and jeNN!) and it’s bigger and way more badass than the one I had from forever ago. This one is digital! And 2.5qt bigger!
In the first week I used it 2 times. In it’s second week (this one) it’s already been used. I’ve been trying to make more recipes at home. And planning them. Not just coming home at 5:15 and opening the fridge/freezer and thinking now what the hell am I going to piece together tonight???
A few weeks ago I planned out the meals for the ENTIRE week. Usually one night’s dish becomes the next night’s leftover. And 1-2 nights a week I’m busy after work so that’s usually the leftover night. Or so I try to plan. This Sunday after church we went to the store and grabbed stuff for chicken soup. I should really post the recipe. It’s so easy! Maybe next week. Ha ha! We had that Sunday, last night, and finished up the last of it tonight. Sunday I also got a link to some new online recipes (well, most likely new to me) and it’s great because most are healthy versions of things we already love (and, for anyone going through WW Gina posts the info on it too).
So back to the title of this post. What’s for dinner 12*22??
Ok so I am updating this after making dinner tonight. First, I decided that I needed another “side” so I made this Baked Rice & Peas to go along with it. I didn’t have a pot exactly like that but I did find a casserole dish and a pot’s lid that worked. So I did everything it said. And when I took it out, the stuff was NOT DONE. I put it on the stovetop and turned the flame on and let it finish cooking. It took like 10 minutes more.
But, I’m proud to say everything was AMAZING! The chicken was so good I ate 3 drumstricks. The corn salsa was so delish! I think it might end up being Jon’s next potluck dish with chips. It’s got a good mix of flavor between the lime, the heat of the jalapenos & chili powder, and love the colors in it. The rice. OMG. I had 2 servings. I was shocked at how much flavor 2 tbsp of parmesan cheese adds! I bought at TJ Maxx today a mini casserole dish with lid to use for next time (it’s the christmas gift from my grandma). So hopefully the recipe will work better next time!
