Ok I feel the need to preface this post with the following. I did not grow up eating brussels sprouts. I did grow up eating a lot of veggies – even lima beans. But about a year ago I felt the need to conquer brussels sprouts. Jon hadn’t had them either so I pieced together a recipe. When made on the BBQ grill – magic happens. (And just a side note, we realize that our barbecue grills only last us about 2-3 years with our mild SoCal weather. We have tried the big expensive 3 burner grills, but found that the simpler, 2 burner is perfect for our family. And extra nice price tag of typically around $100!)
While the grill is heating up, halve all the fresh brussels sprouts. Add some olive oil, salt, pepper & garlic powder. It’s ok to be generous on the olive oil – the more they soak up, the better. Let this marinate for 10-15 minutes.
Throw all the sprouts into a grill basket and grill on low for about 40 minutes. (If you’re purchasing, be sure you select a vegetable basket so nothing falls out through the slots!) Stir occasionally. The outer edges will start to brown and it will smell like popcorn. Odd but true.
After the 45 minutes or so, toss them in a bowl with about 2 tbsp butter, few shakes of Parmesan cheese, and at least the juice of half a lemon (or more if you like the taste).
My whole family thinks we’re crazy for eating these. But we love them. Aubrey even digs it!!
