Whoa, two homemade meals in a row? Am I nesting? Well, pregnant people need to eat, right? The dish du jour is Spinach Lasagna Rolls from Skinnytaste. I’m making this dish, but adding some things so it’s a bit more filling. Why? Because we’re not on a diet. And I’ve learned that some of her recipes aren’t too filling on their own.
But I’ll wait to surprise you with what I changed. I’m sure you can figure it out. You are all smart people

Yum. So check back later on. This is also a dish I’m making that will be frozen to allow for some quick lunches later on when I’m sleep deprived and can’t figure out how to make a sandwich. {yet I’m hoping miraculously I can operate the microwave}

Oh man. This meal was so good. First, here’s a pic of what our actual dinner looked like.
So, this is definitely going to remain bookmarked on my iPad. Here’s what I did, however, to make it fit our lifestyle a bit more.
I cooked 1 1/4lb ground turkey with adding spices of All-Spice, some Cumin, some Cayenne Pepper, and chopped onions. I made sure that I mixed it up a ton so the turkey pieces were pretty small. Once that was cooked, I set it aside and added about 1/2 cup tomato sauce to keep the meat moist.
I made the spinach mixture according to recipe and cooked the pasta the same way. When it came time to prep, I did a layer of the spinach mixture, and then topped with the ground turkey. I found best it folded in thirds. It’s messy, but not as bad as I thought it’d be.
I have no idea why this recipe calls for 32 oz of tomato sauce. I put some on the bottom of the pan, and spooned some over the top of all the assembled lasagnas and I still have about 1/2 the jar left. When I freeze these, I’m going to put a bit on the bottom of the wax paper, then put the lasagna, more sauce, and wrap. I’ll do a layer of wax paper, a few layers of saran wrap, and then last, foil.
This one piece (and the bread and veggies) filled me up. Jon ate 2 portions. If the turkey was left out, I’m sure we would have doubled our portions. And the mixtures (both the spinach & the ground turkey) filled 9 of these babies just perfectly!
