What’s for Dinner? 1*3

Tonight, for the main dish, I’ll be trying out this recipe from Gina’s Skinny Kitchen:  Chicken Thighs with Shallots in Red Wine Vinegar.

I have to hit up the store to get some of the ingredients but I’m excited! I love chicken skin so unfortunately that will be cooked with it on 😉 And for the side dish, I’m going to try {again} the baked rice dish with the new mini {purple} casserole dish I got for christmas!  Hopefully this time it works in the oven!

**Update**

So, First things first. The dish was AMAZING! So delicious. The sauce was incredibly tasty. I loved it!  Rice with veggies was again awesome, although I couldn’t taste as much of the parmesan as before. Maybe I should add a pinch more next time :)

So, now for gripes. The dish took WAY longer to cook than the site says. Maybe I just don’t know how to fry chicken? But it took forever. I started around 5:45 {mainly cuz my chicken I took out at 2 hadn’t defrosted!} and finished everything by 7.  The rice also didn’t cook right in the oven! It was better than last time, so maybe next time I’ll cook it in the oven for an hour before taking out.

Hubby said this dish is a keeper. And the white wine was delish!  I bought the Mirassou Chardonnay.

Oh and PS! I learned what a shallot was! And all this time I thought it was the white part of chives!!!

    A shallot? You didn’t know what that was… LOL! Looks good, probably much better tasting than the power bar and pretzel that I had for dinner. :)

      LOL No I thought it was the ends of the other things. I had no idea they were like mini onions! Much more EXPENSIVE onions!

    My mom loves chicken skin too! You weirdos! lol I have this recipe bookmarked to try soon! Oh and TJs sells shallots for a decent price.
