The Pumpkin Post

Yes, this entire post is dedicated to pumpkins. Although some would know that I am not fond of actually carving or scooping out the innards. But I do love me some pumpkin goodness!

Friday night we were called up the street to our friend’s house as they had finished carving their pumpkins and had opened up a bottle of wine. Love wine! (had a lot of that this weekend too). So, she told me that she wanted to make a pumpkin pie from scratch. Two actually. Her sis was bringing the crusts.

Except that there was a slight communication problem and the crust was actually crumbs – and we had to also form our own crusts. Completely from scratch people, thats what we do. Actually no not really. She hadn’t made anything from scratch before and I only have done a few things.

And then Saturday, I got another pumpkin bug, but this time I got the ingredients pre-made – Libby’s Pumpkin in a can and also Spice Boxed cake mix.

I got the recipe from and went to work.

I’ve said it a million times and I’ll say it again – I love my big stand Mixer.


{I added some mini chocolate chips to the recipe – about a half a bag. You could probably also add nuts. But I hate nuts in food}

{Let them cool before eating. It’s hard, but it’ll be worth it}

Now, don’t rush too quickly to the store to pick up some pumpkin items ;o)
