Another Tuesday, another Tasty Treat! This week is another version of a lasagna – but with Polenta!
Trader Joe’s sells a polenta that is pre-cooked, and comes in a log form. I’ve used it before, but had fried it and then assembled it in a lasagna. The result was a bit too greasy for my liking. This time, tried a different recipe that I dreamed up in my head and it was much better!
Cut the polenta in half length wise, then slice in 1/4″ slivers. In a bowl, mix a small container of ricotta with spinach (I defrosted a frozen bag, drained the liquid, then mixed) and add a few shakes of garlic powder. Layer as such: bit of sauce, polenta, spinach/cheese mixture, sauce, polenta, etc. Top layer was another round of polenta with sauce & cheese on top. Bake at 350* (per the polenta instructions) until the top cheese is bubbly and browning. Let sit for 5 minutes or so before serving. Double this if you’re making in a larger pan than 8×8.
