Stepping Out of the Box {pancakes}

Several years ago, there was a time milk & eggs were not a staple item in our fridge. But I would wake up on the weekend and want pancakes. I started buying the box mix that just required water. Always had that!!! But I’m not one to stay with boring mix. Need to mix it up! I have had a go-to recipe for a long time. But this past weekend I mixed it up even more. Let me share it with you!

It starts with making the recipe according to the box. I did a 2-1 ratio (2 cups mix, 1 cup water). I separate some for Aubrey so she could have her first taste of pancakes. To the remaining batter, I added my usual additions of 1/4 tsp vanilla extract (approximate) and 1 tsp ground cinnamon (approximate). BUT I wanted to take it one step further.

You know those McGriddles from McDonalds? I’ve had them once and wow. I loved how their pancake buns were buttery & sweet. Syrup right in there. So what did I do? I added about 1 tbsp of syrup to the mix. I should have added more but I wasn’t sure about it. Less is not more.

Get the griddle very hot and add a pat of butter and pour in the batter

Once the tops of the pancakes start showing the bubbles – get ready to flip!

After each batch, make sure to add another pat of butter. It helps to make the pancakes buttery, and crisp up the edges. Once they’re all done, time to enjoy!

Quick recipe:
2 cups pancake mix
1 cup water
1/4 tsp vanilla extract
1 tsp ground cinnamon
1-2 tbsp syrup
