Toasting to 33 years at Solita Tacos & Margaritas

My birthday was last week, and every year, we try to go out for dinner to celebrate.  When I turned 30, Aubrey was 6 weeks old. Well, no. 8 weeks old.  We made it out and celebrated with friends.  The next year, she joined us.  And along the way we’ve tried new places, and some great favorites.  This year, turning 33, brought us to a new establishment super close to our home.  It’s not the first of its kind, as there are a few other locations sprinkled around, but it’s the first place I’ve truly loved the Mexican food at.  Jon’s a hard-core Mexican food lover.  He loves it all.  I mainly go in support but after trying Solita’s, I’m kind of now ruined for any other place since this food was truly remarkable.

They’ve been working on the spot for a few months now.  I’d pass it every so often, wondering what it would turn out to be.  When I saw it was going to be another Mexican food place, I kind of got sad, seriously.  There’s a lot of spots out here in Santa Clarita, and they are not of great quality.  Mediocre at best.  When we received an invitation to try out their  food, and after hearing remarks from others say how incredible it was, I was very excited to celebrate my birthday there.

We Uber’d it over to Solita so we could be responsible adults 🙂  We started the night off with appetizers and we each chose a cocktail.  I highly suggest talking with your waiter/waitress to find out their recommendations.  Part of their extensive training is sampling all the cocktails, AND all their wines.  They have an extensive list and can suggest great pairings if tequila isn’t your thing.

I had heard I had to try their Watermelon Margarita & their Guava one.  I never made it to the Guava but the Margarita was delicious.  Not overly sweet, but the perfect blend. We also LOVED their roasted tomatillo salsa and fresh chips.  It was my first time trying the chicharrones de harina and OMG so good! We ordered one more app, and I shared Jon’s response on Instagram:

This did NOT disappoint.  We enjoyed every bite and have told everyone we know they MUST try it!  After apps we refreshed our drinks and tried their Casa Noble Margarita.  Each year, the founders and very special group of people head down to Baja to try out several barrels of tequila.  Once one is selected, it’s brought back to use in their restaurants.  Our taste of their private label was bottle lucky number 146.

Although we couldn’t keep the bottle (darn!) I did get this fun souvenir!

We were told you HAVE to  try the tacos.  My coworker went for lunch and her husband had the chorizo bacon & sweet potato and said so good.  We also asked for their recommendation and red chile beef borracho was highly recommended.  Solita also has some great options for vegetarian dining.  The sauteed mushrooms for the tacos was really good.

We also tried the oak-roasted chipotle chicken, wood-grilled fish Mazatlan, and the pork carnitas.  You really can’t go wrong with any of these options.

Now, because it was my birthday, we had to end with dessert.  We honestly had no room for it, but once we started eating it, we were glad at the suggestion to try it.

I was sharing photos and answering texts from some girlfriends while we ate.  Girls night at Solita’s coming up and we WILL be trying to Guava Margarita!
