I know you’ve seen ALL the recipes on Pinterest with the oatmeal bites. Most I’ve seen involve adding pumpkin puree. But what about the rest of the year? Are there options? I was working on an upcoming post involving easy back to school lunch ideas and wanted to create something that would work for the other 10 months out of the year when we are not stuffing our faces full of pumpkins. I introduce to you – Peanut Butter & Banana Oatmeal Bites!
This was for a very small batch, but if you double up, it can work for a larger crowd! Also note, hand mixing is EXTREMELY messy and the finished product might be a bit gritty due to this.
1 package Quaker Oats Fruit & Cream instant oatmeal in Bananas & Cream
2 tbsp peanut butter (creamy)
1 tbsp chocolate chips (mini chocolate chips would be even better!)
Combine oatmeal & peanut butter until well absorbed. Add in chocolate chips and form into bite-sized bites and store in fridge overnight.
