Socializing with family & friends is just a natural way of how I was brought up.  I come from a large family that used to take annual trips to the beach together.  Those vacations were packed full of family, large meals, lots of laughter, and of course making memories.  Earlier this year, my dad & step-mom decided it was time to bring it back, albeit on a smaller scale, and escape the SoCal heat for a mountain adventure. And by adventure, I mean just hanging out in a cabin in chillier temps.  Our  family is also Italian, and that means a LOT of wine to be enjoyed by most…Except for me right now.

So when I hit up the store to stock up on our food to bring, and beer for Jon, I stopped to pick up my favorite bottle of “champagne” to drink during this time – FRE Brut Sparkling Wine.  I first discovered FRE about 2 1/1 years ago and was curious how the taste was.  I was really surprised & happy with how it had the same taste of champagne without the alcohol.  Unlike a non-alcoholic beverage, it is actually crafted like traditional sparkling wines and has the alcohol removed at the end of the process.  I’ve shared it a lot on Instagram (Mother’s day I had a bottle!) and also decided to try a new variety – their Chardonnay.

My dinner companion one night – a full suit of armor!

Our vacation was fun and the cooler temps were amazing.  Sunday morning was enjoyed with my Mom-osa and blueberry pancakes with the sunshine coming in.  I’d love to tell you that this breakfast was also enjoyed after a full night of sleep….But, if you’ve traveled away from home with little ones, you know that rarely happens.

After we got home, I had a few bottles left over of the Brut and the Chardonnay.  I wanted to see what I could create with our items on hand at home.  I decided to try my hand at a champagne vinaigrette since this brut no longer had alcohol in it.

I will share a super funny story with you.  When I started off with the recipe (and well, with any recipe I’ve done that’s required dijion mustard…) I always use that dry yellow mustard you see in the photo.  I learned this night with dinner, that I am not supposed to use that so my recipe will reflect what you’re supposed to have used.  Whoopsie!

Homemade Champagne Vinaigrette
Recipe type: salad dressing
Cuisine: american
Prep time:
Total time:
Serves: 1 pint
Create your own champagne vinaigrette with alcohol-removed sparkling wine by FRE wines.
  • 1 clove garlic (chopped fine or grated with microplane)
  • 2 tbsp dijon mustard
  • ½ cup FRE wine Brut Sparkling Alcohol-removed Wine
  • 1 tsp apple cider vinegar
  • 2 tbsp fresh lemon juice
  • ½ cup extra virgin olive oil
  • 2 tbsp honey
  • 2-3 dashes of hot sauce (or more if your palate can handle it)
  1. Combine all ingredients in a blender and pulse several times.
  2. Whisking by hand is also an option.
  3. Completed dressing should be a very light yellow color

For my salad, I put spinach, sliced strawberries, blue cheese crumbles, and candied walnuts together with the dressing.  I started off slow adding about 1/4 cup and mixed well.  Depending on the overall size of your salad, adjust. And ALWAYS better to add more dressing vs trying to take some out. That never works.

With the leftover Chardonnay I had, I did equal parts of Chardonnay & Cran-Raspberry juice and topped with lime sparkling water.  Perfect summer night dish!  If this is a meal just for you – add some leftover chicken to the salad!

In full disclosure, there is less than one half of a percent of alcohol that remains in the FRE wines line after their de-alcoholization process.  It also has half the calories of traditional wine!

What would you create with the FRE Brut Sparkling Wine?
