Cupcake Exchange!

Cupcakes are delicious. No doubt. So, when there’s a party where the guests of honor are cupcakes, it’s going to be an amazing night.

To come to the cupcake party, you had to bring 10 cupcakes that you made {or bought}. Luckily, each girl baked their own kind. We had 8 cupcakes to exchange so you took 1 of each flavor home, and 2 for us all to taste and vote on.

And, after the cupcakes were eaten, and the wine had been enjoyed, we realized all of us had iphones, and of course, a photo op was captured!

My cupcake was a Java Chip recipe. I scoured online for a recipe and created my own by piecing things together.

Cupcake:
2 tablespoons strong brewed coffee
1/3 cup buttermilk
1 1/4 cup flour
1/2 tsp baking soda
1/4 tsp salt
5 tablespoons softened butter
2 tsp vanilla
2 large eggs.

Cream butter {use paddle attachment for mixer}, then add all dry ingredients {flour/baking soda/salt}, then add all remaining wet ingredients. Preheat oven to 350. Fill cupcake liners 3/4 way. Bake for about 15 min. Makes about 16

Frosting:
16 oz powder sugar
1 stick softened butter
3 tablespoons milk
2 tsp vanilla
3 oz instant coffee dry mix

cream butter {see above}, slowly add the powder sugar and instant coffee mix {flavored will be best}. Mix well {will be very dry} – add milk one tablespoon at a time, and finally – vanilla. Frosting will be semi-thick buttercream. Enough frosting for the cupcakes.

    Such a fun night! And seeing those iphone photos made me laugh all over again, I totally forgot you took those pics. This MUST become a tradition (the exchange, not the iphone pics – ha!).
