Serving Up Chili’s At Home
During the week, lunch time belongs to me. It’s the one meal where I can eat in silence, relax, flip through Twitter or Instagram, and just enjoy my food hot (or cold) the way it was created to be. I don’t have to worry about picking up a fork off the floor, or grabbing someone more water. I don’t need to make sure the food is cut up into small enough pieces, and I don’t have to worry if the little ones will enjoy it. At lunch, I can be creative with my option or I can have dessert first. I cherish the time, even if I am also multi-tasking and checking work email.
Most lunches are spent in front of my work laptop and eating at the desk just to the left. Why? Because sometimes I spend some of my lunch break picking up Luke, talking to the grandmas, or running a quick errand before I get him. When we come home, it’s a mad dash to get him down for his nap, sometimes change a diaper, heat up lunch and answer emails. Other days, things just fall perfectly into place and work emails are quiet, he’s quiet, and I can take my office into the kitchen.
It’s these lunches that I love the most. I can spend a bit more time on what I’m going to eat, instead of just heating up leftovers. If you’ve spent time recently in the frozen section at your grocery store, you might have spotted the new Chili’s At Home meals. The frozen meals come in family portions and individual portions. Since I’m a nice wife, I figured the family portion would work well for my lunch and provide Jon with leftovers to take to work the next day.
I picked out the Bacon Mac ‘n Cheese (Because HELLO! BACON!!) and also the Seasoned Chicken Bites (you can see all the varieties here and also grab a $1 off coupon). As soon as we got home, I preheated the oven while I got Luke down for his nap. Came back out, popped in the bites, and 15 minutes later added the mac ‘n cheese to a skillet. Everything timed out well and I am in love with the Sweet Chipotle BBQ sauce that came with the bites.
Now, if you know me, I am a paranoid person when it comes to spicy hot things. Jon makes fun of me, which is fine. He always encourages me to try things – and last week I learned I LOVE hot banana peppers. The Mac ‘n Cheese has poblano peppers and I was nervous. He wasn’t home to grab the first bite, so I was brave. And it wasn’t spicy – thank goodness! It had the flavor of a great pepper without the heat.
It was awesome to have the bold taste of Chili’s At Home, although I really wish I had their helpful staff to clean up the dishes when I was done!
