A long long time ago, about 15 high school seniors went camping, alone, and had to survive on whatever cooking skills they had.  And at 18, I know I was not well versed in the kitchen department.  I think I could make toast.  But thankfully I was surrounded by others who could cook and one thing our friend Corney made was Campground Eggs.  I don’t think this is the actual name. But, since we were at a campground, and they’re made with eggs….

I prefer flour tortillas but you’ll grab about 3-4 and cut them up into roughly 1″ cubes.  You’ll grab some vegetable oil and grab your favorite large skillet.  I’m using the legendary REVERE 3 quart saute pan with lid (but, without the lid).

You’ll pour about 2-3 tbsp (again, depending on how many tortillas you’re using) and let it get real hot.  It’s ready when a tiny drop of water pops as soon as it hits the oil.

Toss in your tortilla strips and start stirring.  Be patient, never leave.  It takes awhile for the tortillas to start browning.  And once they start, they are quick to go too far and burn.  Always have them slightly darker than you think you’ll want.

The reason for getting them nice and toasty brown is that when you add the eggs, they won’t get any crispier.  I prefer they be more like a chip than a warm soft tortilla.

Add 3-4 eggs and start stirring again.  You want the eggs to be mixed in well with the tortillas.  Once the eggs are all cooked, it’s time to plate.  I added some fresh berries and a mimosa to mine.  It was the perfect way to round out the meal.

Sure this might seem like a super casual meal for a set of cookware that has been around for over 130 years.  But the purpose of investing in pots and pans by REVERE is so that it can withstand years of use from gourmet meals that require use of the entire brand new 10 piece set of Stainless Steel Cookware, to casual comfort meals that can be created in one pot.  The Copper Confidence Core™ cookware allows for quicker and more even heating but my favorite part involves when you’re not using them.

The patent pending Nest & Protect™ allow you to safely store the pots and pans so less space is consumed.  I love this feature.  Space is a hot commodity in this home!  The 10 piece Stainless Steel set is available online at World Kitchen and Amazon.  They will soon be available through other retailers – so follow along on Facebook and Twitter for updates!  They are dishwasher safe, and oven safe up to 350* without the lids.

And I have a set of their 8″ and 10″ frying pan to giveaway! Follow the Rafflecopter widget below!
